The Past
In 1927, Charles Vlcek established his Chicago butcher shop. He knew his customers by name, many visiting his shop from a wide area. Soon his shop serviced and delivered fine meats to famous restaurants all over Chicagoland. Charles knew that his customers' success with his products was his success. Eventually, Charles' son Chuck carried on with the business into the 1990's continuing the tradition of quality products and excellent customer service. In the late 1990's after Chuck's passing his son Timothy took over the business.
Timothy (Tim) Vlcek grew up in the meat business and with over 20 years of experience, quickly seized opportunities to expand the company's capabilities. Tim moved the company from it's original location into a larger processing facility in 1990 and implemented modern production and information systems technologies. Tim's focus on product quality, consistency and integrity transformed the company into an industry leading meat packer.
The Present
In 2007 Vlcek's Fine Meats built and relocated to a new state-of-the-art processing facility in Bridgeview, IL. This expansion increased the company's production and storage capacity.
Our facility incorporates modern technology along with hands-on artisan custom cutting. Our certified cutting professionals average 20 years experience and produce hundreds of hand trimmed steaks and chops daily. Every item we produce is packaged to maximize shelf life and retain quality.
